Green Beans and Anchovies Salad


A salad of green beans and anchovies.

Serves 10

Ingredients

  • 500 g green beans blanched and refreshed
  • 2 pieces Lemons juiced
  • Extra Virgin Olive Oil
  • sea salt
  • freshly ground white pepper
  • red wine vinegar
  • ½ tin Ortiz anchovies
  • ½ cup whole Almond blanched, peeled and roughly chopped

Method

  1. Dress the beans with the lemon juice, a splash of extra virgin olive oil, salt and pepper.
  2. In a mortar and pestle, pound the anchovies to a paste with a little salt, red wine vinegar and extra virgin olive oil.
  3. To assemble the salad, serve the beans on a platter or in a large salad bowl.
  4. Add the anchovy paste and sprinkle with the almonds.

    These look very good! I love my vegetables. A couple of questions.

    Are the beans very soft? I do like mine with a bit of a crunch.

    Is this a hot salad or cold?
