Chocolate ice-cream

Makes 1 Litre.

Ingredients

  • 12 Eggs separated
  • 110 g Sugar
  • 1 Vanilla Bean
  • 200 g Honey
  • 400 g glucose
  • 600 g Chocolate
  • 500 ml Cream
  • 100 g Dutch cocoa

Method

  1. Whisk yolks and sugar till light and fluffy.
  2. Add cocoa and set aside.
  3. Bring glucose and honey to boil.
  4. Whisk egg whites to stiff peak.
  5. Slowly add honey to egg whites.
  6. Whisk till cool.
  7. Heat cream and chocolate.
  8. Fold whites into yolks.
  9. Then fold in the chocolate mix.
  10. Whip cream to double peak and gold into chocolate mix.
  11. Refrigerate for 6-8 hours or overnight.
