4 Cloves Garlic peeled
2 tablespoons shrimp paste
1 red Thai Chilli
3 tablespoons Sugar
Zest and juice of 1 Lime
Place ingredients into a mortar and pestle and grind until they become a smooth paste. Alternatively puree in a food processor.
Semillon, Pinot Gris and Dessert Wines are the best wines to pair with Shrimp Relish.
