Recipe by Michael Smith from Chef At Home
1 English Cucumber sliced thinly
3 tablespoons Honey
3 tablespoons Cider Vineger
0.25 cup chopped fresh Dill
Salt to taste
Toss all the ingredients together and marinate for a half hour or even overnight before serving.
Note: Yields one jar.
Chardonnay, Pinot Noir and Sauvignon Blanc are the best wines to pair with Speedy Sweet and Sour Cucumber Pickles.
