Zucchini with Tomatoes and Basil


Ingredients

  • Olive oil
  • 1 onion chopped
  • 3 zucchinis cut in half then into large chunks
  • 3 ripe tomatoes cut into eighths
  • salt & pepper to taste
  • 1 bunch fresh basil leaf

Method

  1. Heat a large skillet over medium high heat adding enough olive oil to lightly coat the bottom. Add the onion and sauté until golden. Add the zucchini and tomatoes and season with salt and pepper. Continue sautéing until the vegetables are tender. Stir in the basil leaves just before serving.
