Blueberry and Almond Toasted Muesli

It's so easy and so much healthier to make your own muesli. This muesli can be stored in an airtight container for up to a month.

Serves 4

Ingredients

Muesli

  • 300 g rolled oats
  • 125 ml apple juice
  • 2 tablespoons vegetable oil
  • 80 g raw Almonds
  • 125 g sunflower seeds
  • 40 g pumpkin seeds
  • 40 g sesame seeds
  • 30 g flaked Coconuts
  • 125 g dried blueberries

Raspberry swirl yoghurt

  • ½ cup raspberry
  • 1 cup plain Yoghurt

Method

Muesli

  1. Preheat the oven to 160°C (315°F/Gas 2-3).
  2. Place all the ingredients, except for the dried blueberries, in a large bowl and stir well to combine.
  3. Spread the mixture evenly over a large baking tray and place in the oven for 30 minutes, stirring occasionally until lightly browned.
  4. Remove from the oven,allow to cool then add the blueberries. (If you can't get dried blueberries, use currants or sultanas or a mixture of both).
  5. Serve with the raspberry swirl yoghurt, nectarines and milk.

Raspberry swirl yoghurt

  1. Mash raspberries with a fork and lightly ripple through yoghurt.
