Green Papaya Salad


Serves 4

Ingredients

  • 3 Cloves peeled Garlic
  • Salt
  • 4 to 6 Scud Chilli's
  • 1 tablespoon heaped Roasted peanut
  • 2 tablespoons dried Prawns shrimp
  • 1 Slice Lime optional
  • 4 Cherry Tomatoes quartered
  • 2 Snake Beans cut into 1cm lengths
  • 1 cup shredded Green Papaya
  • 2 tablespoons Palm Sugar
  • 1 tablespoon Lime juice
  • 1 tablespoon Tamarind Water
  • 2 tablespoons Fish sauce

Method

  1. Pound garlic, salt and chillies in a pestle and mortar.
  2. Add peanuts & dried prawns and pound into a coarse paste.
  3. Add lime, if using, then add cherry tomatoes and beans to the mortar, and gently mash together.
  4. Add green papaya and bruise.
  5. Season with palm sugar, lime juice, tamarind water and fish sauce.
  6. Eat with wedges of cabbage, cucumber slices and snake beans
  7. Coconut rice is also a classic accompaniment to this salad,

    Urgent Deb92! Use dried prawns, they're pretty easy to come by in an asian supermarket.. little and BRIGHT orange. For your sake and everyone eating at your table do not use shrimp paste in this recipe.. 2 tablespoons of the stuff would be absolutely revolting. Thinking about it makes me wanna barf.

    Dried prawns???? Does this mean actual dried prawns or are we talking about the block of paste called something that escapes me? HELP please.
