Sauteed Squid


Uses simple ingredients such as Spanish onions, parsley, tomatoes and breadcrumbs

Serves 2

Ingredients

  • Extra virgin olive oil, for cooking
  • 1 spanish onion, finely diced
  • 4 cloves garlic, chopped
  • Sea salt & freshly ground pepper, to taste
  • 4 small squid, cleaned
  • 2 tomatoes , skinned & roughly chopped
  • ½ cup italian parsley, chopped
  • 1 cup fresh breadcrumbs
  • 4 eggs, boiled for 8 minutes & sliced into 4.
  • 1 lemon, juiced

Method

  1. Heat olive oil in a fry pan.
  2. Add the onion and garlic and a large pinch salt and sweat 3 minutes.
  3. Cut the squid into rings and add to the pan.
  4. Toss quickly and add the tomato, parsley, salt and pepper. Transfer to a bowl.
  5. Wipe out the pan and add a little more olive oil.
  6. When hot, add the crumbs, salt and pepper and fry until crisp and golden.
  7. Add the eggs, toss and transfer to the bowl with the squid.
  8. Add the lemon juice.
