Bircher Muesli


A healthy and delicious start to your day, this home made bircher muesli consists of rolled oats, lemon juice, yoghurt, honey, fresh fruit and nuts.

A good friend, Greg Fraser, passed this recipe on to me many years ago, and now my wife Sam makes it for me almost every day.

It is very simple and good for lowering cholesterol levels. You can have any fruit you like with it; we tend to have fresh berries in summer and either poached quinces or pears during the rest of the year.

A really good yoghurt, such as a sheep's milk yoghurt, will make the muesli taste even better.

Serves 4

Ingredients

  • 2 cups rolled oats
  • 2 juice of lemons
  • 1 cup water
  • 2 granny smith apples
  • 2 cups plain yoghurt
  • 6 tablespoons honey
  • Fresh fruit to serve or poached in the winter
  • 4 tablespoons roasted hazelnuts skinned and crushed to serve

Method

  1. Mix the oats, lemon juice and water together, cover and soak overnight.
  2. In the morning, add the yoghurt to the oats, along with the honey and freshly grated apple.
  3. Keep the mixture quite wet.
  4. Serve into 4 bowls and top with the fruit and hazelnuts.

    Yes there is a lot of letting it all hang out in here. Didn't realise people were THAT passionate about their breakfast and their slave duties. I reckon that perhaps there is a big lot of baggage hanging aroud the surface some of you scratched up there. Keep scratching for entertainment''s sake!

    I can't believe you would be so narrow-minded as to criticise someone for making breakfast for their husband. Who cares what a true feminist does, Jane? Genuine, intimate and lasting relationships are built on loving and being loved, on giving and receiving - not by refusing to contribute in case you get labelled 'a 1950s housewife' by some Random in a chat room.     oh ive had this t hotel Buffet breakfest and have only dreamed to make my own..thanks i will give it a go...is it fattening? trying to wath what i eat....

    and jane - i make my husbands breakfeast and my childrens every day..and then when they have finished and ive stopped buzzing around getting my Miss 8 ready for school..My husband then makes me Breakfest.. whats the big deal who makes who breakfest.. ??? good words Nick!

      My husband MAKES ME breakfast every morning. A delicious drink of mango, yoghurt, LSA seeds, light soy....yum yum. Are you jealous, Jane? Who cares who makes breakfast; I can imagine that the delectable Neil Perry would be cooking most of the main meals; and I'd be all for that too!

    This is simpler than some other recipes for Bircher muesli, but it is one of the best - maybe because most of the ingredients are added just before serving? Very light, delicious and one I will be making regularly!
