Fresh Sumo Mandarin-ade

Whip up refreshingly fruity homemade fizzy drink. 


  • 2 whole Sumo Mandarins

  • ½ lemon

  • 120ml white sugar

  • 250ml water

  • 750ml sparkling water

  • Ice, to serve


  • 1.

    Cut the ends off the mandarins and the lemon and cut into wedges about 2 cm wide on the skin side, keeping the skin on.

  • 2.

    Place the mandarins, sugar and the still water into a blender or food processor, and blitz until the sumo mandarins and the lemon are pureed.

  • 3.

    Sieve twice through a fine sieve. Put away in the fridge to chill. The mix will last roughly 3 days.

  • 4.

    To serve, add the remaining water and pour into tumblers filled with ice.
