Jaffa Coconut Roughs
Recipe by Weigh It Up


  • 2 cups (200g) unsweetened shredded coconut

  • 2 tablespoons coconut flour

  • 2 tablespoons cocoa powder

  • 50g dark dairy free choc chips, roughly chopped

  • zest of an orange

  • pinch of salt

  • 4 egg whites

  • 2 tablespoons Natvia stevia blend

  • 2 teaspoon vanilla extract


  • 1.

    Preheat oven to 160°C.

  • 2.

    Mix together coconut, flour, cocoa, choc chips, zest and salt in a medium bowl. Whisk together egg whites, Natvia and vanilla extract and fold through dry ingredients until coated.

  • 3.

    Drop tablespoonful onto a baking tray lined with baking paper and cook for 20-25 minutes. Cool completely before storing in an airtight container.
