Healthy Chocolate and Almond Truffles

  • 1 tablespoon chia seeds

  • 4 tablespoon cold water

  • 75 gm raw almonds

  • 75 gm rolled oats

  • 50 gm desiccated coconut

  • 2 tablespoon cocoa

  • 3 tablespoon Natvia stevia blend

  • 50 gm fresh dates, pitted

  • Desiccated coconut, extra, for rolling

    Place the chia seeds and cold water into a small bowl, stir well, and allow them to sit for 10 minutes. Line a baking tray with baking paper.

  • 2.

    Meanwhile, place the almonds, oats, coconut, cocoa and Natvia into the bowl of a food processor and process until the mixture resembles coarse breadcrumbs (it doesn’t have to be too fine).

  • 3.

    Add the chia seed gel and fresh dates to the food processor and process until the mixture just comes together. It should be able to be rolled into balls, not too sticky. If it’s too dry, you can add another tablespoon of water.

  • 4.

    Roll teaspoonfuls of the mixture into balls, toss in the extra coconut and place onto the baking tray. Refrigerate for an hour or two before serving.


These are quite similar in taste and texture to rum balls; you could easily replace a tablespoon of water for rum, if you wish. They would make a lovely gift, and are a perfect after dinner treat with coffee. These could easily be made gluten free by using gluten free rolled oats.
