Thai Beef and Peanut Salad

This family favourite  is made with cherry tomatoes, mint, chilli and salted peanuts.


  • 1 McCormick Pad Thai Flavour Shot

  • 800g beef fillet

  • 400g cherry tomatoes, halved

  • 1 cucumber, deseeded and sliced

  • 1 long red chilli, sliced

  • ½ bunch mint leaves

  • ½ bunch coriander leaves

  • ¼ cup lime juice

  • 2 tbsp fish sauce

  • ½ cup toasted salted peanuts


  • 1.

    Mix flavour shot contents and beef together in a bowl and marinate for 20 minutes.

  • 2.

    Heat oil in a large frying pan or barbecue grill on high and cook beef fillet 5-8 minutes each side or until cooked to your liking. Transfer to plate, cover with foil and rest for 10 minutes.

  • 3.

    Place tomatoes, cucumber, chilli, mint, coriander, lime juice, fish sauce and peanuts. Slice the beef and add to bowl, gently toss to combine and serve immediately.
