Hueros Rancheros

This beautiful, spicy, Mexican breakfast recipe can be made in individual serves or in one big pan.


  • 1 McCormick Chilli Con Carne Flavour Shot

  • 1 red onion, finely chopped

  • 1 x 400g can diced tomatoes

  • 1 x 400g can red kidney or black beans, drained

  • 1 red capsicum, finely chopped

  • 4 x 60g eggs

  • Fresh parsley leaves, to serve


  • 1.

    Heat a 20cm deep non-stick frying pan over medium heat and add flavour shot contents and onion and cook, stirring 1-2 minutes until onion softens.

  • 2.

    Stir in tomatoes, beans, capsicum and add ¼ cup water, cook, stirring often for 3-5 minutes.

  • 3.

    Reduce heat to a low and crack an egg at a time on top of sauce and cook for 2-3 minutes or until eggs are just set. Sprinkle with parsley and serve with warmed tortillas or toast.

Great recipe, looking forward to trying it on Sunday morning.
Huevos is the correct Spanish word for eggs and this dish known to be a traditional farmer (or rancher) dish.
