This beautiful, spicy, Mexican breakfast recipe can be made in individual serves or in one big pan.
Heat a 20cm deep non-stick frying pan over medium heat and add flavour shot contents and onion and cook, stirring 1-2 minutes until onion softens.
Stir in tomatoes, beans, capsicum and add ¼ cup water, cook, stirring often for 3-5 minutes.
Reduce heat to a low and crack an egg at a time on top of sauce and cook for 2-3 minutes or until eggs are just set. Sprinkle with parsley and serve with warmed tortillas or toast.
