BBQ Chicken Burger

Tired of the same old chicken take out burger? Make this succulent burger with home-made BBQ sauce.


  • 4 burger buns, warmed and toasted

  • 4 large free range chicken thighs, bones and skin removed

  • 3 tbsp BBQ sauce

  • 220g ZOOSH Rock’n Ranch dressing

  • 50g blue Castello cheese

  • 1 stick spring onions, sliced finely

  • 4 iceberg lettuce leaves, washed

  • BBQ Sauce

  • 1 onion, finely chopped

  • 6 cloves garlic, finely chopped

  • 100ml olive oil

  • 150g brown sugar

  • 150ml Worcestershire sauce

  • 500g ketchup

  • Juice of 2 lemons

  • 2 strips of lemon peel (use peeler)

  • 5 bay leaves

  • 1 tbsp finely chopped fresh thyme

  • 1 tbsp dried oregano


  • 1.

    To make the BBQ sauce, Sweat off onion and garlic in the olive oil until soft with no colour for at least 2 to 3 mins, add all remaining ingredients, bring to simmer and cook for about 10 mins. Cool and store in refrigerator.

  • 2.

    Using a meat mallet lightly bash chicken thighs so that the meat is even. This will make it cook easily and evenly.

  • 3.

    Lightly brush chicken with oil and place on hot grill, cook each side for around 4 mins or until cooked through.

  • 4.

    Place cooked chicken thighs in a bowl and spoon over BBQ sauce until well coated, season with a little salt and squeeze of lemon.

  • 5.

    Whisk blue Castello cheese into ZOOSH Rock’n Ranch dressing and chill.

  • To Serve:

    Place iceberg on bottom bun, place cooked chicken thigh with a little extra BBQ sauce on top of lettuce then sprinkle generously with sliced spring onions. Spoon Ranch dressing all over chicken and place hamburger lid on top and serve.
