Beef and Corn Soft Tacos

Teamed with the sweetness of corn, this recipe is great way to use up leftover beef or chicken mince meats.


  • 1 x soft taco kit (kit includes- 10 soft tacos, taco sauce and taco spice mix)

  • 2 teaspoons olive oil

  • 500g lean beef mince or chicken mince

  • 1 corn cob (kernels removed)

  • 2 tomatoes, finely chopped

  • 1 small red onion, finely chopped


  • 1.

    Heat oil in a frying pan. Add the mince, stirring with a wooden spoon to break up any lumps, cook for 5

  • 2.

    Minutes. Add taco spice mix, 3/4 cup of water and corn kernels. Simmer for 2 minutes or until sauce thickens.

  • 3.

    Combine tomato, onion and coriander to create a fresh salsa.

  • 4.

    Warm soft tacos according to pack directions.

  • 5.

    Build your own soft taco with beef, lettuce, tomato salsa, taco sauce and cheese.
