With all the goodness of a salad sandwich but also the fun of being a kid – eat it as is, or open it up and ‘slurp’ each ribbon in as my kids love to do.
Spread each piece of bread with the softened cream cheese.
Cut the slice of ham into 2-3cm ribbons and pile loosely onto one piece of bread.
Use a vegetable peeler to cut very thin slices of the carrot, cucumber and capsicum. Pile loosely on top of the ham.
Top with the other piece of bread and cut into triangles.
