Tuna and Watermelon Ceviche

Try this delicious salad!


  • 300g piece sashimi-grade tuna, cut into 5mm cubes

  • 450g piece seedless watermelon, rind removed, cut into 5mm cubes

  • Juice of 2 x limes

  • 1 long red chilli, seeded, very finely chopped

  • 2 tbs very finely chopped Spanish onion

  • 2 bunches of rocket lettuce, washed

  • 2 tbs extra virgin olive oil

  • 2 tbs very finely chopped chives

  • 2 tbs baby coriander leaves


  • 1.

    Cut tuna and watermelon into 5mm cubes and place in separate bowls

  • 2.

    Drain watermelon and excess juice

  • 3.

    Once drained add the watermelon to tuna with lime juice, chilli and onion Cover and refrigerate for 5-15 minutes to allow the flavour to develop*

  • 4.

    Wash and trim the bases of the rocket (only where required), then place on a serving platter

  • 5.

    Drain some of the marinating liquid from tuna mixture, then stir in oil and chives

  • 6.

    Place the tuna mixture on top of the rocket and garnish with coriander leaves and serve
