Prawn and Kaffir Lime Leaf Soup

Try Gretel's gorgeous soup recipe!


  • 12 x large green prawns

  • 1 x tbsp. of red curry paste

  • 1 x tbsp. virgin olive oil

  • 8 x slices of ginger

  • 800ml of coconut milk

  • 500ml fish stock

  • 2 stalks of lemon grass (white party only)

  • 8 x kaffir lime leaves torn into halves

  • 250g straw mushrooms (fresh or canned)

  • 2 x tbsp. lime juice

  • 1 x tbsp. fish sauce

  • 1 x handful of chopped coriander

  • 1 x handful of un-chopped coriander leaves

  • 2 x red chilies


  • 1.

    Shell and clean the prawns

  • 2.

    Stir the curry paste and oil in a saucepan for about a minute

  • 3.

    Add the stock, coconut milk and, ginger

  • 4.

    Add the lemongrass after squeezing with a pestle (bruising) or rolling the can of coconut milk over it until it’s squished

  • 5.

    Add four kaffir leaves

  • 6.

    Bring to boil then simmer for about 4 minutes

  • 7.

    Add the prawns and the mushrooms, cook until the prawns are pink

  • 8.

    Stir in the lime juice, fish sauce, most of the coriander, remaining kaffir leaves and red chilies

  • 9.

    Take the ginger and the lemon grass out

  • 10.

    Serve and garnish with a few pinches of coriander leaves
