Barbequed Free Range Chicken Breast Marinated in Charlie’s Special Sauce with Haloumi, Fig and Pomegranate Salad

  • 4 x chicken breasts

  • Chicken

  • 4 x tbsp. tomato sauce

  • 4 x tbsp. Worcestershire sauce

  • Squirt of honey

  • 4 x cloves of garlic

  • 2 x tbsp. seeded mustard

  • 1 x tbsp. hot English mustard

  • 1 x tbsp. ground coriander

  • Salt and pepper to taste

  • Fig, Pomegranate & Haloumi Salad

  • 1 x pomegranate, seeded & juice retained for dressing

  • 8 x figs, halved

  • 1 x avocado, sliced

  • 250g haloumi, cut into slices

  • 1 x cup mint

  • 150g rocket

  • Dressing

  • 1 x tbsp. red wine vinegar

  • 2 x tbsp. extra virgin olive oil

  • Pomegranate juice

  • Salt and pepper


  • Chicken:

  • 1.

    Chop chicken into thin strips

  • 2.

    Add all the ingredients to a bowl and mix

  • 3.

    Combine the two, cover and leave for at least two hours to marinade

  • 4.

    Take marinaded chicken, BBQ on high heat until cooked – basting with marinade as you cook

  • Salad:

  • 1.

    Pan fry haloumi for a few minutes until browned on each side

  • 2.

    Add the cooked haloumi to the other salad ingredients in a bowl with the vinegar, olive oil and a dash of pomegranate juice

  • 3.

    Mix to combine

I made this for some friends today for lunch. It was so simple and very tasty.
