Artichokes, Potatoes and Herbs

Create this crunchy, perfect potato side dish at your next BBQ.

Ingredients

  • 8 small potatoes (scrubbed)

  • 3 pieces of Jerusalem artichokes (scrubbed)

  • 5 garlic cloves

  • zest of half a lemon

  • 1 tbl spoon olive oil

  • 10g butter

  • 2 sprigs of thyme

  • a squeeze of lemon before serving

Method

  • 1.

    Grab a couple of sheets of tin foil and an A4 sized sheet of non stick paper.

  • 2.

    Sit the vegetable on the paper and foil bring up the sides and add all the ingredients. 

  • 3.

    Fold over the foil to form a little parcel.  Cook on the BBQ for 30 mins. 

  • 4.

    Remove, season with a little lemon juice, wait for it to cool a little before eating.e, wait for it to cool a little before eating.
