Chicken breast stuffed with Cheese, Prosciutto and Spinach with Broccolini side

Ingredients

  • 4 x chicken thigh fillets

  • 75gm Spinach

  • 4 x strips of prosciutto

  • Olive oil

  • 130gm gorgonzola cheese

  • 1 x Celery stick

  • 1 x Carrot

  • ½ Onion

  • ½ glass of White Wine

  • Tooth Picks

  • Brocollini

  • 5 bunches of broccolini

  • 1 x Garlic clove

  • Drizzle Olive Oil

  • Balsamic glaze

  • Water

Method

  • 1.

    Chop celery, carrot and onion in to small pieces

  • 2.

    Add to fry pan with olive oil and sauté for approx. 5 mins

  • 3.

    Flatten chicken thigh and place gorgonzola cheese, spinach and wrap with prosciutto – place toothpick through thigh to hold ingredients together

  • 4.

    Places chicken pieces in to the frypan

  • 5.

    Add white wine to pan after approx. 10 mins

  • 6.

    Cook for 30-40 mins (checking regularly to not overcook)

  • Brocollini:

  • 1.

    Add ¼ glass of water into frypan

  • 2.

    Add Broccolini, Garlic, drizzle of Olive Oil and cook for 3-5 mins

  • 3.

    Remove from frypan and add balsamic glaze
