Sara Horowitz Winning Venison Tenerderloin

Ingredients

  • Brine

  • sugar

  • salt

  • onion

  • celery

  • carrot

  • Sauce

  • kraft original barbecue sauce

  • roasted pepper

  • toasted garlic

  • caramelised onion

  • cider

  • vinegar

  • apple juice

Method

  • Brine:

  • 1.

    Inject brine into meat

  • 2.

    Rub meat with 1/4 cup butt rub

  • 3.

    Smoke venison over cherry wood uintil medium rare

  • Sauce:

  • 1.

    Mix all ingredients for the sauce
