Seafood Platter

Serves 4

Ingredients

  • 600 g white fish fillets cut into bite size
  • 400 g baby octopus cleaned and cut into 2
  • 1 doz prawn peeled and deveined but with tails on
  • 1½ doz oysters on the shell
  • Olive oil
  • Sea salt
  • Freshly ground black pepper
  • 2 fresh limes or lemons if you prefer

Method

  1. Pre heat your BBQ grill plate to a fairly high temperature.
  2. Before placing onto the grill plate lightly cover the seafood with a little olive oil to ensure it doesn't stick to the hot plate.
  3. Put white fish on first, and cook for 1 minute each side.
  4. It will feel spongy when cooked and be white through to the centre at this time add the octopus and prawns and allow to cook quickly, try not to over cook the prawns and octopus as they will become chewy and rubbery.
  5. Oysters should be kept refrigerated until you are about to eat them as they can go off very quickly in the summer sun.
  6. When all the seafood is cooked assemble onto a large platter with the oysters.
  7. If you like you can chargrill some limes to serve with the seafood.
  8. This is done by placing the limes face down on the grill until they brown.
  9. Serve immediately.
