Banana Four-Play

Banana Crème Caramel; Banana Brulee; Banana Flambee; Banana Chocolate Milkshake

Ingredients

  • Banana Crème Caramel

  • 2 eggs

  • 5 ozs milk

  • 3 ozs heavy cream

  • 1 ripe banana

  • Banana liquor

  • 3/4 cup sugar 

  • Banana Brulee

  • A bunch of mint

  • 5 bananas

  • Lime juice

  • 2 tablespoons sugar

  • Banana Flambee

  • 2 bananas, halved lengthwise

  • 2 ozs grand marnier

  • Juice of .5 meyer lemon juice

  • 3 tbps sugar

  • 3 tblsp butter

  • nutmeg

  • Banana Chocolate Milkshake

  • 1 cup chocolate ice cream

  • 1 cup milk

  • 2 bananas 

Method

  • 1.

    Banana Crème Caramel

  • 2.

    Preheat oven to 350 degrees

  • 3.

    Place 1/2 cup sugar over medium head, add 1/4 cup water to wet sugar

  • 4.

    Boil until water evaporates and sugar turns light golden brown

  • 5.

    Carefully pour sugar into ramekins to coat bottom

  • 6.

    Whisk eggs and remaining sugar together until frothy and incorporated

  • 7.

    In blender combine milk and banana and liquefy

  • 8.

    Add cream and liquor to milk and banana mixture and warm over low heat

  • 9.

    When warm (but still able to touch), slowly add to eggs, while whisking constantly

  • 10.

    Place ramekins in baking pan and fill baking pan with boiling water to half way up ramekins

  • 11.

    Bake in oven for 30 minutes until set 

  • 12.

    Remove ramekins from water bath and let cool to room temperature, then refrigerate at leat 4 hours before serving

  • 13.

    Run knife around edge of custard to loosen

  • 14.

    Place upside down on plate to remove from ramekin, ensuring to pour any remaining syrup over the custard

  • Banana Brulee:

  • 1.

    Finely chop mint

  • 2.

    Slice banana on bias

  • 3.

    Squeeze lime juice and 2 tbsp sugar, toss to coat

  • 4.

    Arrange slice on plate and coat top with sugar

  • 5.

    Torch until golden

  • Banana Flambee:

  • 1.

    Melt belt butter, when froth settles, place bananas flat side down

  • 2.

    Sprinkle with sugar and cinnamon

  • 3.

    Place under hot broiler until turns golden brown

  • 4.

    Grate nutmeg

  • 5.

    Remove, sprinkle with nutmeg, pour grand marnier and light with your choice of incendiary device

  • Banana Chocolate Milkshake :

  • 1.

    Cut bananas in half, sprinkle banana with sugar and bake at 400 degrees until golden. 

  • 2.

    Remove from oven, let cool to room temperature then place in fridge

  • 3.

    Serve in shotglass 

  • 4.
