Burritos

This delicious dinner recipe is an All-Bran Recipe Creation and serves 4.

Ingredients

  • 2 teaspoons olive oil

  • 1 large onion, finely chopped

  • 500g lean beef mince

  • 2 cloves garlic, crushed

  • 1 green capsicum, seeded and finely chopped

  • 2 teaspoons ground cumin

  • 2 teaspoons dried oregano leaves

  • ½-1 teaspoon cayenne pepper

  • 400g tomato puree, preferably salt-free

  • 1 cup beef stock, preferably reduced salt

  • 60g All-Bran Original

  • Salsa

  • 2 tomatoes, diced

  • 1 cucumber, diced

  • 1 small avocado diced

  • ½ red chilli, chopped (optional)

  • 2 tablespoons lemon juice

  • Coriander leaves, chopped

  • Lettuce

  • To serve

  • 8 wholemeal tortillas

  • Shredded lettuce

Method

  • 1.

    Heat the oil in a large saucepan over medium heat. Add the onion and cook until softened. Add the beef and cook, stirring until brown. Add the garlic, capsicum and spices and stir for 2 minutes.

  • 2.

    Add the remaining ingredients and bring to the boil. Reduce the heat and simmer for 15 minutes or until thickened.

  • 3.

    To prepare the salsa combine all ingredients.

  • 4.

    Roll the meat filling in the tortilla with salsa and lettuce.
