Scrumptious Raspberry Muffins

Spoil your Mum this Mother's day with this delicious recipe!


  • 1 ¼ cup of milk

  • 1 egg

  • 2 cups sifted white plain flour

  • 1 tablespoon baking powder

  • 1/3 cup white sugar

  • ½ cup melted butter

  • 150 g frozen raspberries

  • 2 pinches of salt


  • 1.

    Separate the egg whites and beat them in a clean bowl until stiff, using the Electrolux Turbopro stick mixer, whisk at high speed.

  • 2.

    In the beaker, pour the milk, flour, egg yolk, sugar, butter and baking powder. Blend the mix at high speed with the Electrolux Turbopro stick mixer, until smooth. Fold in the egg whites by hand. Take out the mixer and stir in the raspberries.

  • 3.

    Pour the mixture into greased muffin tins and bake in a preheated oven for 12 to 15 minutes, at 180°C.

  • 4.

    When baked, the muffins will rise and become golden. Take them out of the oven and leave to sit only a few minutes before turning them out of their tins and leaving to cool on a cake rack.
