Lobster Martini


Lobster Martini

Peter cooked a special dinner in March for The Australian Cancer Research Foundation and for special guests Crown Prince Frederik and Crown Princess Mary of Denmark on their visit to Australia. This was one of the dishes.

Serves 6

Ingredients

  • 800 g x 2 lobsters cooked and sliced, shell removed
  • 2-3 ripe mango diced
  • 1 young coconut finely chopped flesh
  • 1 large red chilli finely diced
  • 2 juice limes
  • 6 thai basil leaves - torn
  • 2 kaffir limes leave - finely julienned
  • 6 tablespoons coconuts dressing - see recipe
  • 150 ml coconut cream
  • 50 ml lime juice
  • 25 ml fish sauce

Method

  1. Mix mango, coconut flesh, chilli, lime juice & Thai basil to make salsa.
  2. Place 2 tablespoons of salsa in the bottom of a martini glass, top with 3 slices of lobster, then dress with the coconut dressing.
  3. Add a touch more salsa on top and finish with the Kaffir lime leaf julienne.
  4. Mix all ingredients together.
