BBQ Rotisserie Roasted Chicken with Lemon, Thyme and Garlic

  • Ingredients

  • 1 whole chicken size 20

  • 1 garlic clove, peeled and sliced

  • 1 lemon, heated in a pot of

  • boiling water

  • 6 sprigs thyme

  • 100ml / 3.4 fl oz olive oil

  • 3 Desiree potatoes, sliced

  • 100g / 3.5 oz baby spinach

  • 1 green shallot, sliced

  • Aioli

  • Combine in a bowl 1 egg yolk with 50ml vinegar, 1 garlic clove, finely diced, and 10g / 0.4 oz mustard. Whisk together, slowly adding oil to form a mayonnaise. Season to taste.

    Once you know how to set up your rotisserie,cooking is as easy as placing the meat on the shaft, turning the motor on, and sitting back to relax with family and friends.

    Firstly, assemble the rotisserie according to the manufacturer’s instructions.

  • 3.

    Preheat the barbeque until ‘hot’ registers on the heat indicators.

  • 4.

    To prepare bird, season inside and out with salt and pepper.

  • 5.

    In a bowl combine olive oil, garlic and thyme. Coat bird with baste and place hot lemon into the cavity.

  • 6.

    Secure bird to the rotisserie shaft and place the shaft in the motor and turn on.

  • 7.

    Turn off burners that are directly under the roast and leave the remaining burners on low.

  • 8.

    Close the hood. Try not to open the barbeque too often to look at the meat. Doing so adds to the cooking time.

  • 9.

    Chicken will cook for about 1 ½ hours for a 2 kilo / 4.6lb bird or 45 minutes per kilo. 18 – 23 minutes per lb.
