Spiced Autumn Cocktail

This is a delicious spiced cocktail punch filled with beautiful berry plum and citrus flavours and ideal for any occasion. If you can’t find vanilla bean paste simply scrape out a vanilla pod and add the seeds along with the pod to the mix. The base to this cocktail can be made ahead of time and kept in the fridge for up to 2 weeks prior to adding in the gin, berries and soda water.

Ingredients

  • 2 bottles lindeman’s early harvest sweet red
  • 2 cinnamon sticks
  • 2 whole cloves
  • ½ vanilla bean or ¼ tsp. vanilla bean paste
  • orange peel of 2 oranges
  • lemon peel of 1 lemon
  • 1 cup brown sugar
  • 2 cups gin
  • 2 cups frozen rasp berries, defrosted and smashed
  • 750ml soda water
  • Ice

Method

  1. Combine the red wine, cinnamon, cloves, vanilla, sugar, lemon and orange peel and bring to the boil.
  2. Allow the mix to sit over night to cool completely and infuse with the spices. Drain out the spices and the rind.
  3. Into a large jug or punch bowl add in the gin, the berries and the chilled spiced mix and top with the soda water.
  4. Stir and serve.
