Cook Quinoa as instructed on packet. In the water that your Quinoa is cooking place cube of vegetable stock. Once cooked place to side.
In fry pan cook bacon and garlic add your selected diced vegetables. Cook until bacon is cooked through.
Add the cooked quinoa to the vegetables and mix together
Serve hot and enjoy
