Red Grape and Fetta Salad

  • 160g red grapes

  • 1 cup cous cous

  • 50g English spinach

  • 50g rocket

  • 80g fetta, broken

  • 100g green beans, blanched

  • 100g snowpeas, blanched

  • For the dressing:

  • 1 tbs lemon juice

  • 2 tbs olive oil


  • 1.

    1. Prepare cous cous as per instructions on pack. Set aside for 5 minutes.

  • 2.

    2. Combine the grapes, spinach, rocket, fetta, beans and snowpeas in a bowl and lay over a bed of cous cous.

  • 3.

    3. Drizzle with the dressing.
