Ingredients

Method

  1. Thinly slice the aubergines and brush both sides of each slice with olive oil.
  2. Season with salt and pepper.
  3. Lay on a baking sheet and bake in a 500ºF/260ºC oven about 15 minutes per side.
  4. Toss with salt, pepper, olive oil and freshly chopped parsley.
  5. Serve warm or at room temperature.

Notes & Tips

*These can also be done in a sauté pan on the stovetop, but it's tricky. The oven method is tidier and yields more consistent results.
