Fruit Medley with Berries and Cream Sauce

  • 4 Rockmelon

  • 250 grams red seedless grapes

  • 1 punnet strawberries

  • 2 Red delicious apples

  • 1 punnet blueberries

  • 2 kiwi fruit

  • 1 tin of raspberries in juice

  • 1 tbsp. brown sugar

  • 1 cup water

  • 1 300 mls Thickened cream

    To make berry coulis add raspberries in juice from opened tin to saucepan with a tbsp. of fresh blueberries and 3 cut strawberries and a tbsp. of brown sugar. Stir on low flame, as the mixture becomes dry add water and after 6 min remove from heat.

    Cut Rockmelon in half in a triangular jagged cut so the edge is more decorative. Hollow out the seeds from the centre.

    In a bowl add whole blueberries and red grapes after being both washed and separated from any stems. Cut on board the kiwi fruit into circular slivers and add to bowl, cut strawberries in half after removing leaf and washing, cut apple into cubes and remove the core and add all to the bowl and mix. Add fruit mixture to rockmelon centre. Add berry coulis after it has cooled over the top and then a dollop of thickened cream in the centre
