Toasted Banana Bread with Ice Cream and Fried Banana

  • Melted butter

  • 1 3/4 cups self-raising flour

  • 1/4 cup plain flour

  • Dash ground cinnamon

  • 2/3 cup, brown sugar

  • 1/2 cup milk

  • 2 eggs, whisked

  • 50g butter, melted, cooled

  • 2 overripe medium bananas, mashed

  • Fried Bananas

  • 1 banana

  • table spoon butter

  • dash cinnamon

  • dash white sugar


  • 1.

    Preheat the oven to 180 degrees and grease a baking tray with the butter and line with baking paper

  • 2.

    Combine all dry ingredients and then slowly fold in all wet ingredients. Mix well leaving no lumps

  • 3.

    Bake for 30 to 45 mins or until no longer soft in the middle

  • Fried Bananas:

  • 1.

    Heat a pan and grease with butter.

  • 2.

    Finely slice the bananas and fry in the butter. While lightly dusting in cinnamon and sugar

  • 3.

    Fry the bananas until they start to very slightly burn, if done right they should be brown rather than black

  • 4.

    Slice and toast the banana bread and sever with a scoop of vanilla ice cream topped with the fried banana.
