Zucchini and Whitebait Frittelle

Try Riccardo's fabulous Frittelle recipe, delicious and simple to make. Perfect for entertaining.


  • 500g whitebait or silver fish

  • 10 zucchini flowers, torn into small pieces

  • 2 eggs, beaten

  • 100g plain flour

  • 100ml sparkling mineral water

  • ½ teaspoon cayenne pepper

  • 2 tablespoons chopped flat-leaf parsley

  • 2 litres vegetable oil (or rice bran oil)

  • sea salt and freshly ground black pepper


  • 1.

    Mix all of the ingredients except the oil in a large bowl and allow to stand for 20 minutes.

  • 2.

    In a deep frying pan (or a wok), bring the oil up to a high heat. Carefully spoon in the mixture using a large spoon. Fry the frittelle until golden brown, then remove and drain on paper towel.

  • 3.

    Sprinkle with salt and pepper.
