White Chocolate Rocky Road

Need some gift ideas? Why not bake? Rather than buying junk gifts, whip up some delicious treats!


  • 400g white chocolate, chopped

  • 60g mini marshmallows

  • 400g Turkish delight, chopped coarsely

  • 1 cup flaked coconut, toasted

  • 1 cup (140g) shelled pistachios, lightly toasted

  • Silver cachous balls, to serve


  • 1.

    Line a baking tray with baking paper.

  • 2.

    Melt white chocolate in a medium bowl over a saucepan of barely simmering water and allow to cool slightly.

  • 3.

    Meanwhile, combine the marshmallows, Turkish delight, coconut and pistachios in a large bowl. Working quickly, stir in the chocolate and mix to combine. Spoon mixture, a teaspoon at a time onto the baking tray to form small mounds. Sprinkle with cachous balls and refrigerate until set.
