Grated Potato Cake


Serves 8

Ingredients

  • 500 g Potatoes such as russets, peeled and grated
  • 60 ml Cream
  • Salt & Pepper

Method

  1. Heat the oven to 400°F/200°C.
  2. Generously oil or butter a baking sheet.
  3. Squeeze the water out of the grated potatoes in a tea towel, and spill the potato into a bowl.
  4. Toss in the cream, salt, and pepper to coat evenly.
  5. Taste to check the seasonings.
  6. Spoon the potatoes into small pancakes on a baking sheet.
  7. Bake 15 minutes.
  8. Flip and bake 15 minutes longer, until cooked through, crisp-edged, and golden.
  9. Keep warm on a serving platter until serving.
