Freshly shucked oysters with lemongrass & finger lime

G.H. MUMM Blanc de Blancs is perfect when served as an aperitif or to accompany fish or seafood dishes, a Carpaccio of scallops, lobster served with crispy spring vegetables, or oysters.

Ingredients

  • 2 dozen oysters, opened & flipped
  • 2 punnets coriander cress, snipped & washed

Dressing

  • 1 lemongrass stalk
  • 1 birds eye chilli, seeds removed & brunoised
  • 2 finger limes, seeded
  • 1 tbsp palm sugar
  • 1 tbsp coriander, finely chopped
  • 2 limes, juiced

Method

  1. Mix all of the ingredients together & serve a little on each oyster and top with coriander cress.
