Greek Lamb Stew

VERY ORIGINAL GREEK LAMB STEW

Ingredients

  • 6 large lamb shanks
  • 6 large onions
  • 6 medium carrots peeled
  • 4 whole tomatos cut into quarters
  • 12 medium mushrooms whole but cleaned
  • 6 whole medium pototoes peeled
  • 200 grams fresh beens
  • 500 grams peeled pumkin
  • 1 cup parsley
  • 1/2 bunch cellery chopped
  • 2 tablespoons olive oil
  • 1 litre chicken stock
  • 1 can peeled tomatoes
  • 1 whole sweet potato cut in quarters

Method

  1. PLACE OIL IN PAN AND BROWN SHANKS UNTIL FULLY BROWNED
  2. ADD ONIONS AND COOK TILL SOFT AND SOME COLOUR
  3. ADD CHICKEN STOCK AND LET SIMMER FOR TEN MINUTES UNTIL STOCK REDUCES A LITTLE.
  4. ADD ALL OTHER INGREDIANTS AND STIR UNTIL MEAT AND VEGES ARE MIXED
  5. ADD MORE WATER IF NEEDED TO BRING STOCK LEVEL HALF WAY UP DISH
  6. COVER WITH ALFOIL THEN PUT LID OVER THE ALFOIL AND COOK AT 180 DEG FOR 4 HOURS.
  7. THE FOOD SHOULD BE THICKENED BY THIS STAGE AND READY TO SERVE.
