Greek Lamb Stew

VERY ORIGINAL GREEK LAMB STEW

Ingredients

  • 6 large lamb shanks

  • 6 large onions

  • 6 medium carrots peeled

  • 4 whole tomatos cut into quarters

  • 12 medium mushrooms whole but cleaned

  • 6 whole medium pototoes peeled

  • 200 grams fresh beens

  • 500 grams peeled pumkin

  • 1 cup parsley

  • 1/2 bunch cellery chopped

  • 2 tablespoons olive oil

  • 1 litre chicken stock

  • 1 can peeled tomatoes

  • 1 whole sweet potato cut in quarters

Method

  • 1.

    PLACE OIL IN PAN AND BROWN SHANKS UNTIL FULLY BROWNED

  • 2.

    ADD ONIONS AND COOK TILL SOFT AND SOME COLOUR

  • 3.

    ADD CHICKEN STOCK AND LET SIMMER FOR TEN MINUTES UNTIL STOCK REDUCES A LITTLE.

  • 4.

    ADD ALL OTHER INGREDIANTS AND STIR UNTIL MEAT AND VEGES ARE MIXED

  • 5.

    ADD MORE WATER IF NEEDED TO BRING STOCK LEVEL HALF WAY UP DISH

  • 6.

    COVER WITH ALFOIL THEN PUT LID OVER THE ALFOIL AND COOK AT 180 DEG FOR 4 HOURS.

  • 7.

    THE FOOD SHOULD BE THICKENED BY THIS STAGE AND READY TO SERVE.
