Irish Stew


Ingredients

  • 150 g Shoulder of lamb Boned & cut into chunks
  • 150 g Leg of lamb cut into chunks
  • 150 g Breast of lamb cut into chunks
  • 150 g Neck of lamb cut into chunks
  • ½ kg Potato Peeled & cut into chunks
  • 300 g Small Pearl onions Peeled
  • 200 g small Button onions Cleaned
  • 1 Celery heart Peeled & cut into chunks
  • 1½ L light lamb stock Or water
  • 1 can Guinness
  • 1 sprig Sage
  • 1 sprig Rosemary
  • Bay leaf
  • Flat-leaf parsley Roughly chopped
  • Salt & Pepper

Method

  1. Trim the lamb, cut into chunks, season.
  2. In the olive oil lightly brown the lamb, onions & mushrooms.
  3. Add all the root vegetables & the bouquet garni (thyme, rosemary & bay leaves tighed into a parcel).
  4. Add the stock, Guinness season & slowly cook for 40 minutes to 1 hour.
  5. Correct the seasoning stir in the roughly chopped parsley.
  6. Serve with crusty bread with lots of butter.

    Sounds nothing like an Irish Stew First the lamb should be chump chops dropped into boiling water and cooled over night before making the stew, the stew should contain carrots and peas as well as the cellery and potato spiced with salt and white pepper and simmered in a saucepan till tender with no mushy vegetables. Sorry but make a real Irish Stew Guy.M
