Ginger Chocolate and Almond Meringues

This beautiful looking and delicious meringue recipe will be a sure favourite loved by the whole family!


  • 3 egg whites

  • ¾ cup caster sugar

  • 2 tablespoons ground almonds

  • 2 -3 tablespoons flaked almonds

  • 250g Philadelphia Frosting Made with Cadbury Chocolate

  • 1 tablespoon finely chopped glace ginger


  • 1.

    Beat the egg whites until stiff peaks form. Gradually add the sugar beating well between each addition, until dissolved. Fold through ground almonds.

  • 2.

    Pipe or spoon 36 x 4cm rounds of meringue onto paper lined baking trays. Top the meringues with flaked almonds. Bake in a slow oven 140oC for 30 minutes. Allow to cool completely in the oven.

  • 3.

    Fold together the Philly and ginger and then pipe or spoon onto the flat side of half the meringues. Sandwich together with the remaining meringues.

  • 4.

    Serve within 2 hours.
