Pasta and Fagioli

A delicious recipe from Stefano de Pieri for you to try at home!



  • 1.

    Soak the borlotti beans in water preferably for 8 hours.

  • 2.

    In a large pot place the beans, onions, sticks celery, carrots, clove of garlic, 4 spoons of tomato paste, sage, thyme, add some water up to cover all the ingredients. Let it cook at low heat for 2 hours.

  • 3.

    When the soup is cooked add some hand made pasta. Serve with some parmesan cheese on top and drizzle of olive oil.
