Salmon Fillet with Fresh Sorrel and Spinach Sauce

A delicious seafood dish foryou to try at home!

Serves 6

Ingredients

  • 6 salmon fillets
  • 75g (3oz) butter, melted
  • Juice of ½ a lemon
  • 2 level teaspoons plain flour
  • 300ml half fat crème fraiche
  • 1 egg yolk
  • 25g (1oz) sorrel, finely chopped
  • 25g (1oz) spinach, finely chopped
  • salt and black pepper

Method

  1. Measure all the ingredients except the sorrel and spinach into a processor or blender.
  2. Whiz until smooth and season with salt and pepper, whiz once more.
  3. Pour into a bowl and sit the bowl over a pan of water over a low heat until barely simmering.
  4. Briskly whisk for about 10 minutes until thicken and fluffy.
  5. Add the sorrel and spinach and gently heat for a few minutes.
  6. Check seasoning and serve hot.
