Turkey Braised in Red Wine

A recipe that has lots of flavour and will be enjoyed by everyone!

Ingredients

  • 2 x turkey legs cut into two drum and thigh
  • Plus the turkey wings
  • 6 pieces in total

For the Marinade

Method

  1. Place all the above ingredients in a bowl add the turkey and leave to marinade preferable over night o at least 6 hours
  2. To make the coq au vin add a knob of butter to a the pan or casserole dish.
  3. Add the pancetta and lightly brown remove from the pan and the button mushrooms and onions.
  4. Cook for a few minutes to colour them remove from the pan.
  5. Drain the marinade from the chicken dispose of the vegetables and reserve the wine
  6. Gently dip the turkey into the seasoned flour the colour in the pan.
  7. Turn down the heat add the vegetables back in and the thyme and bay leaf add reserved red wine and simmer for 1 hour to cook in an oven for 1 hour
  8. When ready allow to rest and finish with chopped leaf parsley
