Turkey, Leek and Ham Pie

A delicious British pie recipe that will be enjoyed by all!


  • 1 x large onion chopped

  • 2 large leeks sliced into 2 cm pieces washed well

  • 2 large carrots sliced into lozenges

  • 200 ml chicken or turkey stock

  • 200 ml double cream

  • thyme leaves

  • 10 button mushrooms sliced in half

  • 500gms-cooked turkey

  • 200gms-cooked ham

  • 2 tbsp chopped tarragon

  • 1 tbsp grated parmesan

  • pinch of cayenne pepper

  • fresh black pepper

  • 225 gms frozen puff pastry defrosted


  • 1.

    In a pan add a knob of butter sauté the onion until soft without any colour

  • 2.

    Add the carrots and leek and sauté for 5 minute until carrots start to become soft

  • 3.

    Add the sliced mushrooms

  • 4.

    Cover with the cream and stock and simmer until its starts to thicken

  • 5.

    Finish by adding the turkey, ham, cayenne pepper and herbs

  • 6.

    Check the seasoning

  • 7.

    Pour into a pie dish 1/ 1.2 pint size

  • 8.

    Roll out the enough to cover the lid and add an extra strip around the edge

  • 9.

    Press firmly down and seal all around

  • 10.

    Brush with beaten egg and sprinkle with Parmesan cook in an oven for 20 minutes gas 6 250c
