Cut the tops off the garlic bulbs until you can see the cloves & arrange around the chicken.
Pour oil into the garlic bulbs. Soak the saffron in a little wine to soften.
Put all the ingredients in with the chicken & roast in an oven pre-heated to gas 8 then turn down to gas 3 for about an hour in total, or until the chicken is cooked.
Baste regularly whilst cooking paying special attention to basting the garlic.
