Paola’s Pasta

An authentic Italian pasta dish from Stefano de Piere's Italian friend, Paula.



  • 1.

    In a lager pan, add a drizzle of olive oil, add the onions, the diced speck and cook for couple of minutes, add a splash of sparkling wine.

  • 2.

    Add the celery, gradually adding the beef stock, the chilly flakes, potatoes, diced tomatoes and cook for 5 minutes before adding the pasta.

  • 3.

    Once all the elements are cooked add the provolone cheese and let it melt down. To finish off, add some parsley one the top.
