Woodfired Mixed Mushrooms with Shaved Parmigiano

Sydney restaurant Puntino shares one of their wonderful and delicious woodfire recipes!

Ingredients

  • Select your favourite mushrooms and how many you want
  • ¼ teaspoon flaked sea salt
  • ½ to 1 teaspoon of rosemary, thyme, parsely, margom, sage
  • Parmigiano- grano padano
  • 2 lemons
  • 6 to 8 tablespoons of extra virgin olive oil
  • Fresh cracked pepper

Method

  1. Wipe the mushrooms to remove and dirt clinging to them , trim the stem ends, cut the mushrooms vertically into slices.
  2. Prepare the woodfired oven.
  3. Take prepared mushrooms, sprinkle with salt and herbs, put on flat baking tray.
  4. Cook for ten minutes pull out of oven.
  5. Place mushrooms on wooden board. With vegetable peeler shave layer of parmigiano over mushrooms.
  6. Cut 1 lemon into 4 to 6 wedges for garnish, squeeze the juice of the other lemon into the bowl.
  7. Drizzle 1 to 1 1/2 tablespoons of olive oil over mushrooms, sprinkle with cracked pepper, serve with lemon as garnish.
