Of the artichokes, use only the bottom part. Pick off all the leaves and slice off the bottom.
Then place the artichokes in a bowl with water and half a squeeze of lemon.
To prepare the artichokes, in a medium size pan, put a drizzle of olive oil, add the shallots and garlic, cook quite slowly with some water.
Use the water in which the artichokes were kept, cook those for 30/ 35 minutes on low heat and preferably with a lead on top.
To make the sauce, remove the artichokes from the pan, use the residue of cooking juice, drain it in a small pan back to the heat. Add knob of butter, combine until it reaches a nice consistency.
To cook the sea bass fillets, in a pan, a put drizzle of olive oil, place the fish with skin down first, cook for just few minutes on both sides.
Add some salt at the end, and parsley when plating up with the artichokes.
